Fattoush Salad Recipe
Serves 8-10
This refreshing salad, inspired by blogger Sarah Britton of My New Roots, presents the perfect opportunity to experience our Za’atar Spice Mix.
Dressing Ingredients:
- 1/4 cup extra virgin cold-pressed olive oil
- 1/4 cup freshly squeezed lemon juice
- zest of 1 lemon
- 1 tsp. raw liquid honey
- 2 – 4 cloves garlic, minced
- a couple pinches of salt
- a pinch of black pepper
Directions:
Put all ingredients in a jar with a tight-fitting lid and shake. Set aside.
Salad Ingredients:
- 2 medium cucumbers (with skin)
- 3 cups chopped tomatoes
- 2 red bell peppers
- 1 large red onion
- 3 green onions
- 1 cup chopped flat-leaf parsley
- 3/4 cup chopped mint
- 1/4 cup crumbled flax crackers or toasted pita
- 2 tablespoon za’atar
Directions:
Wash, prepare and chop all veggies. Wash, spin-dry and chop herbs. Place together in a large bowl. Pour dressing over the salad, stir and let stand for 30 minutes. Before serving, sprinkle your za’atar and crumble your crackers atop the salad.
